Chicken Pot Pie 雞鍋派Laura Vitale

Ingredients:
1 Sheet
Store-Bought Puff Pastry, thawed 派皮解凍
MIREPOIX
2條紅蘿蔔切丁
1個洋蔥丁
西芹丁2支
雞腿切丁675g
雞高湯3杯
冷凍青豆1杯解凍
1/3 cup無鹽奶油
1/3 cup 中粉
½ cup Heavy
Cream 鮮奶油或48g milk+38g butter
Salt and
Pepper, to taste
2 Tbsp Olive
Oil
1 Tbsp fresh
thyme, chopped
1 Tbsp Fresh
Parsley, chopped
1 Egg, beaten
with 1 tbsp of water to make egg wash
Process
Brown the
chicken橄欖油炒雞丁,黑胡椒調味
MIREPOIX全下cook them down
做roux
炒麵粉+雞湯塊1/2塊or濃雞or雞粉2t
加高湯煮滾再simmer 15m in
加鮮奶油增加香濃度
加青豆
加巴西里、百里香
