苦瓜醬Chinese Bittermelon Sauce

青和白苦瓜含囊籽3根快刀剁薄片以縮短烹調時間
green and white bittermelon include seeds and all parts cut into thin pieces to shorten the cooking time
鳳梨片1/4個或一罐小罐頭連汁
1 can of pineapple and juice or a quarter of fresh pineapple
辣豆瓣醬3tbsp
chilli bean paste 3tbsp
素蠔油3tbsp
oyster sauce 3tbsp
1tbsp
sugar 1tbsp
3粒話梅
3 crack seeds
水或蔬菜高湯3cups
water or vegetable stock 3 cups or more as needed
干草粉1tbsp
Chinese liquorice powder 1tbsp

steps                                                            

全部入鍋加蓋小火煮至軟爛約40min
put all things into a pot with lid on and bring to boil,
simmer about 40mins till bitter melon soft 
拿掉話梅籽
take off the seed of crack save the meat
機器打碎
pour into a blender to mix it well
過濾
strain it
回鍋加洋菇片再煮滾收汁
add sliced mushrooms and bring to boil, keep cooking to a thicken consistency
加巴西里碎
shreded parsley
